Banana Cupcakes with Peanut Butter Cream Cheese Frosting
These cupcakes have a wonderful banana flavor and the peanut butter cream cheese frosting is nutty, creamy and pairs perfectly with the spongy cupcakes.
1/2 cup plain yogurt (you can use vegan sour cream or vegan yogurt)
2 very ripe bananas mashed
2 teaspoons vanilla extract
1 stick of unsalted butter or Earth Balance at room temp
1/3 cup white sugar
1/4 packed brown sugar
1 egg/ flax egg
1 1/4 cup flour
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
For Frosting:
1 1/2 cup powdered sugar sifted
1 8oz container cream cheese (vegan or regular) at room temp
1 stick unsalted butter or Earth Balance at room temp
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
pinch of salt
crushed peanuts for topping (optional)
