Barley with coconut, pineapple, and flaxseed.
Ingredients
2 cups water
pinch of coarse salt
1 cup barley (use millet for gluten free)
1/2 cup unsweetened almond milk or coconut milk
1/2 cup chopped fresh pineapple
1/4 cup large-flaked unsweetened coconut, toasted
1 tbsp. plus 1 tsp. whole flaxseed (I used ground)
1/4 cup pure maple syrup
