A delicious and healthy enchilada casserole filled with good for you ingredients.
Ingredients
1 15 oz can black beans
1 4 oz can diced green chiles
12 corn tortillas
1 28 oz jar green enchilada sauce
1 cup roasted corn (I used frozen)
1 cup diced white onion
1/2 small jalapeño – minced
2 cloves garlic-minced
2 cups shredded Mexican cheese (optionally vegan)
(optional) avocado, salsa, sour cream
