Ingredients
1 large egg, at room temperature
2 tablespoons coconut sugar
3 tablespoons melted coconut oil + more for oiling cupcake tin
2 tablespoons real maple syrup
1/2 teaspoon pure vanilla extract
1/4 cup low-fat buttermilk, at room temperature
1/2 cup + 3 tablespoons whole wheat pastry flour (spooned & sweep method)
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon fine grain sea salt
1/3 cup fresh blackberries, roughly chopped (about 14 whole small blackberries)
