Healthy, sugar-free oatmeal muffins with chopped pecans and blueberries. Perfect as a snack or even as breakfast!
Ingredients
1 cup old-fashioned oats
1 cup buckwheat flour
1 tsp ground cinnamon
1/2 tsp sea salt
1 tsp baking powder
1 tsp baking soda
1 tbsp powdered stevia
2 eggs
1 cup unsweetened applesauce
1/4 cup coconut oil, melted
3/4 cup milk of choice
1 tsp pure vanilla extract
1 cup blueberries, frozen or fresh (I used fresh)
1/2 cup pecans, chopped roughly
