An autumnal soup of butternut squash and apple, spiced with earthy cumin and chilli for a warming kick.
Ingredients
2 tbs oil
1 red onion sliced
1 bay leaf
1 tsp cumin
1 tsp tomato paste
1/2 tsp chilli powder (optional)
1 vegetable stock cube
Half of a butternut squash, peeled, deseeded and diced
Half of a green apple, peeled and diced
5-6 mugs of water
1/2 cup milk
1/4 tsp black pepper
Salt to taste
