Cannoli Overnight Oatmeal
This is a healthier, breakfast version of that classic Italian treat
For the chocolate chip filling:
3 tablespoons rolled oats
1/8 teaspoon ground cinnamon
2 tablespoons ricotta cheese (low-fat or regular)
2 tablespoons yogurt
2 tablespoons milk
½ teaspoon maple syrup
¼ teaspoon vanilla extract
1 tablespoon chocolate chips
For the citrus filling:
3 tablespoons rolled oats
2 tablespoons ricotta cheese
2 tablespoons yogurt
2 tablespoons milk
½ teaspoon maple syrup
¼ teaspoon vanilla extract
1 ½ teaspoons candied citrus peel
6 raisins, chopped if desired
For the cannoli shells (the crepes):
1 egg yolk
¼ cup milk
Pinch of salt
3 tablespoons flour
To assemble:
About 6 chocolate chips
2 candied (glacé) cherries
Confectioner’s (icing) sugar
