These Carrot Cake Zucchini Muffins are naturally vegan and super healthy. They’re soft, flavorful, and packed with enough fruits and veggies to call it a healthy breakfast on the go!
Ingredients
½ cup oat flour (process oats until fine)
1 cup white whole wheat flour
1 tsp baking soda
1 tsp cinnamon
½ tsp nutmeg
½ tsp ground ginger
½ tsp salt
½ cup agave syrup
1 cup applesauce
1 chia egg (1 tbsp chia seeds mixed with 3 tbsp water) or a regular egg
2 tbsp coconut oil, melted
1 tsp pure vanilla extract
½ cup finely shredded zucchini
½ cup finely shredded carrot
For the Topping:
¼ cup chopped pecans
1 tbsp agave syrup
¼ tsp cinnamon
