1 tablespoon olive oil
1 shallot, minced
1 clove of garlic, minced
¼ cup raisins
2 6 oz. bags of fresh spinach
½ tablespoon sherry vinegar
2 tablespoons toasted pine nuts
½ teaspoon salt
