Ingredients
For the Fritters:
1 1/2 cups finely diced cauliflower
1 1/2 cups shredded apple (about 1 medium apple)
4 scallions, white and light green parts thinly sliced
1/2 jalapeño, finely diced
1 tablespoon fresh parsley, chopped
1 tsp. salt
1/2 tsp. fennel seeds, lightly crushed
1 egg
1/4 cup all-purpose flour
1-2 tablespoons extra-virgin olive oil
For the Salad:
Mixed greens
Cherry tomatoes, halved
Balsamic Vinegar
