Ingredients
1 Tbsp coconut oil
1 Tbsp fenugreek seeds
4 cloves garlic, finely chopped
1 medium onion, diced
2 Tbsp freshly grated ginger
2 medium carrots, diced
2.5 Tbsp chana masala spice
1 Tbsp garam masala spice
1/2 tsp cayenne (optional)
1 28-oz can diced tomatoes (liquid included)
2 19-oz cans of chickpeas
