Cheese Salad with Macadamia-Pomegranate Dressing
An amazing salad full of greens, nuts, veggies, and cheese. Extra highlight: the Macadamia-Pomegranate Dressing!
1 large mixed salad of choice (arugula, endive, etc), cleaned and washed
1 avocado
1 large handful of grapes, seeded
1 cup green or black olives, stones removed
1 yellow or orange bell pepper, diced
1/2 cup (60 g) chopped walnuts
1/2 cup (50 g) parmesan cheese
1 baguette (for cubes and slices, gluten-free if required)
herbs of choice
2 Tbs olive oil
2 Tbs citrus juice + zest
1 Tbs white wine oder apple cider vinegar
3.5 oz (100 g) to 5 oz (150 g) gorgonzola cheese
1 cup (100 g) macadamias divided (1/2 cup soaked overnight)
1 pomegranate seeded divided
2 gloves garlic
2 Tbs maple syrup or sweetener of choice
salt, pepper to taste
