Cheesy Cauliflower Poppers Skillet

Healthy comfort food in under 30 minutes. Kids loved it.
Ingredients
1 small (1.5 lbs) cauliflower head, roughly chopped*
1 tbsp olive oil, extra virgin
1 small onion, finely chopped
2 garlic cloves, minced
2 tbsp whole wheat flour (I used spelt)
2 cups vegetable or chicken broth, low sodium**
3 tbsp cream cheese (I used full-fat organic)**
3/4 cup any cheese, divided (I used organic marble cheese)
3 tbsp whole wheat breadcrumbs
