Chocolate Layer Cake with Vanilla Coffee Frosting
A seriously delicious vegan & gluten-free chocolate layer cake with vanilla coffee frosting and a caramel drizzle!
For the cake:
2 cups gluten-free oat flour
2 cups almond meal
1 cup cacao powder
1/2 cup pure maple syrup or other liquid sweetener (date syrup, honey, etc.)
1 cup almond milk
2 bananas
2 tsp baking soda
2 tsp apple cider vinegar (sounds weird, but it reacts with the baking soda to help the cake rise)
2 tsp baking powder
2 tsp vanilla extract
Pinch of salt
For the mocha filling:
1 cup walnuts
1/4 cup cacao powder
1/4 cup pure maple syrup or date syrup
1/4 cup almond milk
For the vanilla coffee frosting:
2 cups cashews, soaked in water for 3-4 hours
1/2 cup cold coffee
2 tbsp pure maple syrup or date syrup
1/2 vanilla bean, scraped (or 1 tbsp natural vanilla extract)
For the decorations:
1/2 cup cacao nibs
