Crispy on the outside, soft on the inside, these breakfast cookies made from cocoa, coconut, sweet potatoes, buckwheat flour, and walnuts.
Ingredients
1 cup cooked and mashed sweet potato
6 Tablespoons coconut oil
2/3 cup pure maple syrup
1/2 teaspoon pure vanilla extract
1 large egg
1 Tablespoon ground flax seed
1 Tablespoon coconut palm sugar (or brown sugar)
3/4 teaspoon sea salt
1 teaspoon baking soda
3 Tablespoons cocoa powder (or cacao)
1 cup buckwheat flour
1 cup unsweetened fine flaked coconut, plus 1/2 cup
1/2 cup chopped walnuts, optional
