Coconut-Carrot-Lentil Soup

This easy, creamy, super healthy one pot soup is fresh, rich and full of deep, spiced flavours and healthy ingredients like protein packed lentils, vitamin filled carrots, iron rich coconut milk and anti-inflammatory packed spices.
Ingredients
1 yellow onion, diced
1 ½ cups carrots, diced
¾ cup red lentils, rinsed
398 mL can coconut milk (full fat or light)
⅓ cup vegetable broth
1 tablespoon fresh ginger, peeled and grated
2 teaspoons coconut oil
1 teaspoon cumin
¼ teaspoon turmeric
½ cinnamon stick
Salt and pepper, to taste
Optional: Sriracha or other hot sauce, to taste
