Coconut Chocolate Mouse Crepe Cake
An eye catching dessert, layered with fluffy coconut chocolate mouse and topped with creamy coconut and fresh fruits. Make as many layers as you wish, just make sure the mouse layers are nice and thin. You can add some rum or liqueur for summer parties.
The Crepes:
1 1/2 cups flour
5 tablespoons brown sugar
1 teaspoon baking powder
2 1/2 cups almond milk
1 tablespoon melted coconut oil + more for cooking
The Coconut Chocolate Mouse Frosting:
1 1/2 cans of coconut milk
100 g vegan dark chocolate
5 tablespoons brown sugar
The Coconut Cream and Fruit:
1/2 can coconut milk
5 tablespoons brown sugar (or powdered sugar)
2 nectarines
1 mango
fresh mint leaves
