Cornmeal Crusted Eggplant Fries

Crispy, earthy and guilt-free! These ‘fries’ are finger-licking good. AND THAT CRUNCH!
Ingredients
Fries:
1 medium eggplant, cut into 1/4 inch thick ‘fries’
1/4 cup Otto’s cassava flour
1/2 cup non-dairy milk (I used flax milk)
3/4 cup cornmeal
1 teaspoon herbs de provence (or favorite herb blend)
salt, pepper to taste
Marinara:
1 tomato or handful of small tomatoes
handful of fresh basil (approx. 1/4 cup)
1 tsp clove powder
1 tsp coconut nectar or maple syrup
1 tbsp olive oil
salt to taste
