Cous Cous With Seven Vegetable Stew
Inspired by my travels in Marrakesh, this simple stew is very easy to make and a big hit at gatherings.
2 tbsp Olive oil
1 medium onion, finely chopped
2 cloves garlic, finely chopped
1 stick celery, diced
1 small each, diced: carrot, zucchini, turnip
1 cup diced orange squash, such as butternut
1 cup each: diced tomatoes, chicken broth or water
1/2 tsp each: ground cinnamon, toasted crushed cumin, smoked paprika, ground black pepper, cayenne pepper, ground ginger
Pinch saffron
Salt to taste
1 cup canned chickpeas, well drained
1 quarter wedge preserved lemon, finely chopped, optional
1 tbsp each: Fresh cilantro, parsley & mint
1 cup quick cous cous
