Ingredients
2 tbs olive oil
1 onion, diced
1 tbs grated ginger
1 red chilli, deseeded and finely chopped
1 tomato, finely chopped
2 tbs coriander (cilantro) roots and stalks, finely chopped
6 curry leaves
1 tsp yellow mustard seeds
2 tsp ground cumin
1 tsp ground coriander
1 tsp ground cinnamon
1 tsp ground turmeric
2 garlic cloves, finely chopped
1 cup red lentils
3 cups vegetable stock
1 cup coconut milk
salt and pepper, to taste
