Creamy Coconut Rice Pudding with a tropical kick – super easy to make, a real joy to eat and it’s vegan too! Maybe even better than the “original”?
Ingredients
1 can coconut milk (1 can = 440 ml)
¼ cup short grain white rice (¼ cup = 75g)
1 small pack vanilla sugar (1 small pack = 1/2 tsp vanilla powder/1 tsp vanilla extract and 1 tbsp sugar).
1 pinch of salt
1 anise star
¼ can pineapples or ¼ fresh pineapple (1 can = 440 ml)
Optional
½ banana, mashed
