Crispy tofu, marinated in a Mexican sauce, coated in cornmeal and baked for extra crunch
Ingredients
1 packet tofu
2 tbsp olive oil
3 garlic cloves, crushed
1 tbsp chopped coriander
1 tbsp chilli powder
1 tsp ground cumin
1/2 tsp oregano
juice of 1 lime
100g cornmeal
100g Greek yoghurt
1 bunch coriander
8 flour or corn tortillas
fillings of your choice
