Cumin Roasted Winter Vegetable Tacos
Get your hands on these tacos loaded with cumin roasted winter veggies, red cabbage slaw, and a sweet tahini sauce!
For the Tacos:
6-8 corn or whole wheat tortillas
1 small head cauliflower
3 small turnips
2 large parsnips
2 small/medium celery roots
2 Tablespoon sunflower oil, plus a little extra for the cabbage
1 tsp maple syrup
1 teaspoon cumin
½ tsp garlic powder
salt to taste
4 cups shredded red cabbage
optional toppings: sprouts, avocado, sea salt and freshly ground pepper
For the Tahini Sauce:
¼ cup + 1 Tbs tahini
1 Tbs honey, agave, or maple syrup
2 tsp apple cider vinegar
1½ tsp whole grain Dijon mustard
salt to taste
2 Tbs water
