A cozy autumn granola packed with pumpkin, oats, and quinoa.
Ingredients
3 cups (270 g) rolled oats
¾ cup (100 g) pumpkin seeds
½ cup (90 g) quinoa
2 Tbsp (22 g) chia seeds
1 cup (150 g) dried cranberries
¼ tsp (2 g) salt
1 ½ tsp (3.5 g) ground cinnamon
1 tsp (2 g) ground ginger
¼ tsp (.5 g) ground nutmeg
¼ tsp (.5 g) ground cloves
(Or substitute 3 tsp (7 g) of premixed pumpkin spice)
½ cup (122 g) pumpkin puree (storebought or homemade)
½ cup (120 mL) maple syrup
¼ cup (60 mL) oil (canola [best], coconut, olive, or whatever you have)
½ tsp (2.5 mL) vanilla extract
