Easter Garden Overnight Oatmeal
With Easter just over a week away, here’s an Easter breakfast idea! It’s Banana and Coconut Overnight Oatmeal (with added spinach) topped with Oatmeal Cookie Dough “Easter eggs”. Happy Easter, everyone!
For the overnight oatmeal:
2 cups baby spinach, stems removed
2 cups milk of choice
2 overripe bananas
1 ½ cup rolled oats
2 tablespoons chia seeds
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 ½ cups yogurt
½ cup shredded coconut
For the oatmeal cookie dough “Easter eggs”:
1 cup rolled oats (divided into 1/3 cup + 2/3 cup)
1 overripe banana
3 tablespoons PB2 (or regular peanut butter)
¾ teaspoon ground cinnamon
Pinch of salt
1 tablespoon maple syrup
½ teaspoon vanilla extract
Decoration ideas: Melted chocolate (or substitute yogurt), sprinkles and chopped nuts
