Easy 5 Bean Salad
Easy 5 Bean Salad- healthy, vegan, and SO easy to throw together as a side dish or potluck dish.
1 (15 ounce) can kidney beans, rinsed and drained
1 cup fresh or frozen shelled edamame (thawed)
1 cup fresh green beans, stems removed and cut into 1 inch pieces
1 (15 ounce) can garbanzo beans (chickpeas), rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 cup diced celery (about 5-6 stalks, white parts removed)
½ red onion, diced (about ½ cup)
2 tablespoons fresh parsley, chopped
¼ cup fresh lemon juice
2 tablespoons agave syrup
¼ cup white wine vinegar
1 teaspoon extra virgin olive oil
¼ teaspoon ground sea salt
¼ teaspoon freshly ground black pepper
