Ingredients
½ medium cauliflower (½ = 400g)
2 onions
½ red pepper
2 small-med potatoes
1 cup green beans (1 cup = 100g)
2 thumbs ginger
1 tbsp olive oil
1.5 tbsp curry paste (make sure the paste is vegetarian – choose your fave)
2 cans coconut milk (2 cans = 800ml)
1 lime, juiced
1 tsp curry powder
1 tbsp maple syrup
Salt to taste
1 bunch cilantro, fresh (if you fall in the cilantro haters group, try basil instead)
