Chocolate Pumpkin Cupcakes
1 1/4 cup unbleached flour
1 cup sugar
1/3 cup unsweetened cocoa
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger
1 cup water
1/3 cup pumpkin puree
1 teaspoon vanilla extract
1 teaspoon vinegar
Pumpkin Buttercream Frosting
1 cup vegan butter 2 sticks
3 cups confectioners sugar sifted plus up to 1 cup more to attain desired consistency
1 Tablespoon vanilla extract
2 Tablespoons pumpkin puree
