Vegan pad thai recipe with tofu, carrots and bok choy in a tangy, sweet and savoury sauce. These pad thai noodles are better than takeout pad thai noodles.
Ingredients
4 oz (1/2 package) rice noodles
2 tbsp olive oil/ vegetable oil
2 cloves garlic (minced)
1 cup firm tofu
2 cups bok choy (roughly chopped)
1 cup carrot (matchsticks / thinly sliced)
3 tbsp crushed peanuts
2 tbsp seedless tamarind
1 cup boiling water
2 tsp sriracha sauce
1/3 cup brown sugar
2 tbsp soy sauce
chopped cilantro
lime wedges
crushed peanuts
sesame seeds
plum sauce
