Easy Vegan Peanut Cold Sesame Noodles
These easy, healthier vegan peanut cold sesame noodles are so good, you will want to skip the Chinese takeout in favor of a homemade meal.
For the Peanut Sauce:
1/2 cup creamy salted peanut butter
1/4 cup coconut aminos (or low sodium tamari)
1/4 cup filtered water
3 tablespoons rice vinegar
3 tablespoons toasted sesame seed oil
1 1/2 tablespoons red chili paste (or to taste)
1 tablespoon coconut sugar
1-inch piece fresh ginger, peeled
2 medium garlic cloves
For the Noodles:
12 ounces dried soba nooodles
1 cup organic shelled edamame
2 scallions, thinly sliced
1 large carrot, halved lengthwise and cut into matchsticks
1/2 large seedless cucumber, halved lengthwise and cut into matchsticks
3 tablespoons toasted black/white sesame seeds
chopped lightly salted roasted peanuts, for garnish
