Ingredients
For the pasta:
2 Tbsp olive oil
1 onion, sliced
6 dried dates, roughly chopped
1 Tsp cumin
Pinch of cinnamon
Pinch of cardamom
1 eggplant, cut into thin sticks
4 apricots, sliced
100 mL water
2 Tbsp Tomato puree
10 cherry tomatoes, halved
160 g pasta, cooked
For the topping:
20 g pistachios, roasted
