Faux Loaded Potato Skins- uses cauliflower in place of potatoes for a low carb snack/game day option. Topped with veggie bacon, sour cream, cheese, tomatoes and green onions.
Ingredients
1 medium size head fresh cauliflower, cut into florets
2 eggs, beaten
1/2 cup shredded pepper jack cheese
salt and pepper to taste
1/2 cup shredded cheddar cheese
1/3 cup sour cream, reduced fat
2 strips veggie bacon, cut into very small pieces (like Morningstar Farms brand)
2 green onions, chopped
1 tomato, diced
