Fig Jam-Filled Almond Cupcakes
For me, this is the BEST cupcake recipe because it has two of my favorite ingredients: Fig Almond Spread and almond flour. These cupcakes are moist, fluffy, have a mouthwatering fruity filling, and to top them off, a sweet and creamy frosting. This is a gluten-free recipe.
For Cupcakes:
Nonstick vegetable oil spray
3 cups almond flour or meal
1½ Teaspoons baking powder
½ Teaspoon kosher salt, divided
6 large eggs
1 cup granulated sugar
2 Teaspoons vanilla extract
For Frosting:
2 Teaspoons vanilla extract
1 cup (2 sticks) unsalted butter, room temperature
2 cups powdered sugar
¼ cup heavy cream
¼ Teaspoon almond extract
For the Filling:
½ cup Fig Almond Spread
Toasted sliced almonds
