Ingredients
1 box Lundberg Spanish Rice
2 1/4 cups filtered water
1 1/2 cups red kidney beans
1 bunch of Tuscan or Lacinato kale, ribs removed + shredded {approximately 6 heaping cups}
5 cloves garlic, chopped
1 1/2 cups of fresh tomatoes, diced
1/4 teaspoon sea salt
1/4 teaspoon crushed red pepper flakes {optional}
1 tablespoon olive oil
