These noodle bowls are the perfect combination of cozy and delicious. Perfect for those long winter days!
Ingredients
8 oz rice noodles
1 scant Tbs non-gmo cornstarch + 2 Tbs cold water
¾ cup freshly squeezed mandarin juice
¼ cup + 2 Tbs almond butter
3 tsp freshly graded ginger
1½ Tbs honey (agave, maple syrup, or cane sugar)
2 tsp liquid amino’s (tamari, or soy sauce)
2 cup collard greens, cut in ribbons
sesame seeds for garnish, optional
scallions for garnish, optional
