Gingerbread Cheesecake with Tofu
Cheesecake made healthier with soft tofu and light cream cheese! This light gingerbread cheesecake is filled with the best flavors of Christmas, and it makes a great addition to your holiday table!
Crust:
7.75 ounces (220g) honey graham crackers, about 15 sheets
2 teaspoons ground ginger
3/4 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
pinch of salt
4 tablespoons melted butter
2 tablespoons molasses
Filling:
14 ounces (400g) soft tofu
14 ounces (400g) low-fat cream cheese, at room temperature
1 cup cane sugar
4 large eggs
2 1/2 tablespoons molasses
1 teaspoon pure vanilla extract
2 teaspoons ground ginger
1 teaspoon cinnamon
1 teaspoon freshly grated nutmeg
1/4 teaspoon cloves
pinch of salt
