Gluten-free Falafel with Yogurt-Dill Sauce
Gluten-free falafel served with an irresistible sauce made from Greek yogurt, fresh dill, and a touch of lemon.
1 (15 ounce) can garbanzo beans, drained and rinsed
1 large carrot, shredded
6 green onions, finely chopped
1 clove garlic, minced
1 egg or 1 flax egg
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon pepper
juice of 1 lemon
1 tablespoon dried parsley
2 tablespoons quinoa flour (or other gluten-free flour)
1/4 cup gluten-free panko breadcrumbs
olive oil for cooking
Yogurt-Dill Sauce
6 ounces plain yogurt
3 tablespoons fresh dill
1 tablespoon white vinegar
1 tablespoon lemon juice
1 tablespoon olive oil
