golden beet tart with goat cheese yogurt sauce

A simple to prepare puff pastry tart with roasted golden beets and a cooling goat’s cheese yogurt sauce. This makes a nice weekend lunch.
Ingredients
5 golden beetroots
Olive oil
1 tsp of brown sugar
2 tsps of cider vinegar
1 package of pre-rolled puff pastry
Handful of chopped chives or spring onions, for garnish
1.8oz (50g) of goats cheese
1 small clove of garlic, crushed
Juice of ½ a lemon
⅓ cup (78ml) of greek yogurt
