A super healthy salad featuring roasted broccoli, fresh grapes and hearty chickpeas tossed in a grainy mustard vinaigrette
Ingredients
2 heads of broccoli, chopped into florets
1 can of chickpeas, drained and rinsed
1 small red onion, sliced thinly into half moons
2-3 large handfuls of grapes
Vinaigrette
3 Tbsp White Wine Vinaigrette
5 Tbsp Olive Oil
2 Tbsp grainy mustard
1 tsp honey
salt & pepper to taste
