This light and healthy meal is inspired by the Mediterranean cuisine. It consists of black olives, cherry tomatoes, feta cheese, and delicious zoodles. The best part is that you don’t have to weigh things out! Simply use equal measurements of cheese olives, and tomatoes.
Ingredients
1 Medium Onion (peeled and diced)
1 Large Courgette
50g Feta Cheese (chopped into medium squares)
50g Cherry Tomatoes (chopped in half)
50g Black Olives
50g Soft Cheese
4Tbsp Whole Milk
1Tbsp Olive Oil
1Tsp Garlic Puree
1 Small Lemon (rind and juice)
Handful Fresh Basil
Salt & Pepper
