Green Chile Pathiri is a fusion of the cuisines from New Mexico and India. Roasted, Hatch green chiles are layered between several layers of green chile crepes, olives, cheese, and toasted pinon nuts. The blend of flavors is simply amazing!
Ingredients
10 crepes (recipe provided)
10 whole green chile pods – roasted, stems and seeds removed, chile cut open and laid flat*
Toasted pinon (pine nuts)
Queso fresco, crumbled*
Monterey Jack cheese, grated (optional)*
Finely chopped red onion
Chopped Kalamata or other black olive
