Ingredients
8 ounces halloumi cheese
2 medium size zucchini
1 bell pepper
1 small red onion
12 cherry tomatoes
1 tablespoon olive oil
salt & pepper
Mint Yogurt Sauce:
1/2 cup plain Greek yogurt
juice of 1 lime
1 tablespoon tahini
1/4 cup fresh mint leaves (about 12 leaves)
salt to taste
serving suggestions: romaine lettuce, whole wheat pita
