Hippie Salad with Sprouted Grains and Tahini Dressing

Arugula, red cabbage, broccoli and sprouted grains with tahini dressing. Birkenstocks required.
Ingredients
1 head broccoli, cut into florets
1 bunch arugula
1/2 small head of red cabbage, thinly sliced
1/4 small red onion, diced
1/2 cup pumpkin seeds
1 1/2 cups sprouted grain, like amaranth, quinoa, millet or wild rice
Dressing:
1/2 cup tahini
Zest and juice of 1 lemon
2 tablespoons extra virgin olive oil
1 garlic clove, chopped
1 tablespoon honey
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 cup water
Sea salt to taste
