Honey Apple Oat Bars

Delicious Fall inspired healthy and moist bars.
Ingredients
2 cups quick or rolled oats
1 1/4 cups whole wheat flour
1/2 tsp baking powder, aluminum free
1/2 tsp cinnamon
1/4 tsp salt
1 egg, large
1/2 cup + 3 tbsp raw honey, divided
1/2 cup coconut oil, room temperature (not melted)
1/4 cup applesauce, unsweetened
3 medium apples (I used Granny Smith)
Cooking spray (I use Misto)
Topping:
1 cup pecans, finely chopped
1/2 cup quick or rolled oats
1 tsp cinnamon
1/4 tsp salt
1 tsp pure vanilla extract
