Indian-Style Spinach Salad with chickpeas, dried apricots and pappadums. This salad is both vegan and gluten-free!
Ingredients
10 cups baby spinach
1 red apple (sweet – I use red delicious), sliced
1 green apple (tart – I use granny smith), sliced
1/2 cup roasted almonds, coarsely chopped
1 cup chickpeas
1/2 cup dried apricots, sliced
4 pappadums (I use cumin flavour)*
1/4 cup olive oil
1/2 tsp curry powder
1/4 tsp cumin
1 clove garlic, minced
2 1/2 Tbsp lemon juice
1/8 tsp freshly ground pepper
