This extremely delicious and spicy Instant Mango Pickle is an integral part of Kerala Sadya. Prepared with simple ingredients, this instant Mango Pickle with crunchy and tangy mango pieces, is a classic combination with rice, Kanji and curd rice.
Ingredients
Unripe/ Raw Green Mango : 2
Mustard : 1 tsp
Fenugreek seeds (Uluva) : 1 ½ tsp (roasted and powdered)
Ginger : 1” piece
Garlic : 10 – 12 cloves
Ginger garlic paste : 1 tbsp
Green chili : 1
Curry leaves : 4 sprigs
Turmeric Powder : ½ tsp
Kashmiri Chili Powder : 4 tbsp
Asafoetida / Kayam powder : 1 tsp
Coconut oil : ½ cup
Salt : as required
Vinegar (optional) : if required
