Jelly-filled cinnamon doughnuts transformed into baked oatmeal! Gluten-free and vegan too.
Ingredients
¼ cup mashed banana (~ ½ very ripe banana)
½ cup pumpkin puree or zucchini puree
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
2 teaspoons maple syrup
1 teaspoon vanilla extract
1 cup rolled oats
¾ teaspoon baking powder
Pinch of salt
⅔ cup almond milk
2 – 3 tablespoons jelly (jam)
2 teaspoons cinnamon sugar
