Kale and Avocado Pesto with Ligurian Trofie

A fun and spring-y twist on traditional pesto. Oil free and ready in about 20 minutes 🙂
Ingredients
2 3/4 cups kale, rinsed and de-stemmed
1 avocado
1 lb. trofie (or other pasta with ridges to catch sauce like penne)
2 tablespoons fresh basil, minced
2 cloves of garlic, minced
1/3 cup raw slivered almonds
1/3 cup parmesan cheese (or nutritional yeast) + additional for topping
2 tablespoons apple cider vinegar
8 oz green beans, trimmed and halved
1 lb. red potatoes, cut into 1/2 inch slices
sea salt and fresh ground black pepper
