A very spring-time vegan coconut oil sugar cookie flavoured with real lavender and a lemon glaze.
Ingredients
1 tbsp culinary lavender buds
6 tbsp melted coconut oil
3/4 cup organic powdered sugar
3 tbsp unsweetened non-dairy milk
1 tsp vanilla extract
1/4 tsp baking soda
1/4 tsp salt
1 cup all purpose flour
1/3 cup white rice flour
For the lemon glaze
1 cup organic powdered sugar
juice of 1 small lemon
lemon zest + extra lavender, for garnishing
