Lemon Chickpeas- filled with flavorful hints of lemon and tarragon. Only 9 ingredients, 20 minutes to make, and uses 1 pan!
Ingredients
1 tablespoon olive oil
2 cloves garlic, minced
1 medium shallot, chopped very fine (about ¼ cup)
¼ teaspoon ground sea salt
⅛ teaspoon freshly ground black pepper
2 cans (16 ounce) garbanzo beans (chickpeas), rinsed and drained
2 tablespoons chopped fresh tarragon
¼ cup roasted pine nuts
1½ tablespoons fresh lemon juice
